It’s National Banana Bread day and I can’t think of a better way to celebrate than with one of my favorite recipes, Chocolate Chip Banana Bread Muffins. These scrumptious muffins are perfect for on-the-go breakfasts or snacks for kids (and adults too!) The combination of chocolate chips and bananas make these tasty treats moist and sweet. This cake mix recipe so easy-to-make too. I love using boxed cake mix to make delicious baked goods and snacks for kids.
Ingredients:
- 1 box of Cake Mix {I recommend Spice cake mix}
- 1 stick of Butter
- 2 Eggs
- 3 Bananas
- 1 11.5 oz. bag of Chocolate Chips
Supplies:
- Large mixing bowl
- Potato masher (to mash the bananas)
- Small microwavable bowl
- Mixing spoon
- Cooking spray or cupcake liners
- Muffin or cupcake pan
Directions:
1. Preheat oven to 350°.
2. In a large mixing bowl, mash the bananas.
3. Soften the butter in the microwave for 15 – 30 seconds.
4. Mix the butter and bananas together.
5. Add the cake mix, eggs, and chocolate chips and mix well.
6. Spray the muffin pan with cooking spray or line it with cupcake liners.
7. Bake for 45 minutes – 1 hour. Insert a toothpick into the middle of a muffin to check if the muffins have baked through.
8. Remove the muffins from the muffin pan and let cool.
You can make this recipe with yellow or white cake mix, but I recommend using Spice cake mix. It adds so much flavor to these tasty muffins. But, beware… these sweet snacks for kids are so scrumptious that they never last long.
